My site suffers from an overload on the processing unit sometimes and I do not know the reason for it. I moved the server from VPS to a dedicated 8-core server and the problem still exists. When visits rise to 6000 visits, the site becomes very heavy and the system does not return to stability a little except when I activate the I am under attack mode on Cloudflare and I blocked the bots and the problem still exists and I do not know the reason

check your addon identify the one is consuming your resource

Disable all addons, then enable them individually while monitoring server usage. You will identify which addon is consuming your server resources.

I deleted an add-on and it stabilized for a while then things went back to normal and now it's slow without the add-on

As both ngbaze and HAXOR have mentioned, you should disable all the add-ons and enable them each to find out which one is causing the issue. It's likely something related to it. Once you found it, remove it.
